  • 1 (8 oz) package cream cheese, softened

  • ½ cup chicken broth
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon Italian seasoning
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust to taste)

For Topping:

  • 1 cup shredded mozzarella or Parmesan cheese
  • ½ cup buttery crackers, crushed (Ritz or similar)
  • 2 tablespoons butter, melted
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

Step 1: Preheat & Prep

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish with butter or nonstick spray.

Step 2: Cook the Chicken & Rice

  1. Cook the rice according to package instructions.
  2. If not using rotisserie chicken, cook chicken breasts by boiling or baking, then shred.

Step 3: Make the Creamy Sauce

  1. In a large bowl, mix together cream cheese, sour cream, cream of chicken soup, and chicken broth.
  2. Stir in garlic powder, onion powder, Italian seasoning, salt, and black pepper.

Step 4: Assemble the Casserole

  1. Spread the cooked rice evenly into the prepared baking dish.
  2. Add the shredded chicken over the rice.
  3. Pour the creamy sauce mixture evenly over the chicken and rice.
  4. Gently stir to ensure even coating.

Step 5: Add Toppings & Bake

  1. Sprinkle shredded cheese over the casserole.
  2. In a small bowl, mix crushed crackers with melted butter, then sprinkle over the top.
  3. Bake uncovered for 25-30 minutes, or until the top is golden brown and bubbly.

Step 6: Serve & Enjoy

  1. Remove from oven and let cool for 5 minutes.
