- 2 cups cooked rice (white or brown)
- 2 cups cooked chicken, shredded (rotisserie or boiled)
- 1 (10.5 oz) can cream of chicken soup
- 1 (8 oz) package cream cheese, softened
- 1 cup sour cream
- ½ cup chicken broth
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon Italian seasoning
- ½ teaspoon black pepper
- ½ teaspoon salt (adjust to taste)
For Topping:
- 1 cup shredded mozzarella or Parmesan cheese
- ½ cup buttery crackers, crushed (Ritz or similar)
- 2 tablespoons butter, melted
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
Step 1: Preheat & Prep
- Preheat your oven to 375°F (190°C).
- Grease a 9×13-inch baking dish with butter or nonstick spray.
Step 2: Cook the Chicken & Rice
- Cook the rice according to package instructions.
- If not using rotisserie chicken, cook chicken breasts by boiling or baking, then shred.
Step 3: Make the Creamy Sauce
- In a large bowl, mix together cream cheese, sour cream, cream of chicken soup, and chicken broth.
- Stir in garlic powder, onion powder, Italian seasoning, salt, and black pepper.
Step 4: Assemble the Casserole
- Spread the cooked rice evenly into the prepared baking dish.
- Add the shredded chicken over the rice.
- Pour the creamy sauce mixture evenly over the chicken and rice.
- Gently stir to ensure even coating.
Step 5: Add Toppings & Bake
- Sprinkle shredded cheese over the casserole.
- In a small bowl, mix crushed crackers with melted butter, then sprinkle over the top.
- Bake uncovered for 25-30 minutes, or until the top is golden brown and bubbly.
Step 6: Serve & Enjoy
- Remove from oven and let cool for 5 minutes.
- Garnish with fresh parsley and serve warm!
