For the Crumb Topping:

  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted

For the Glaze (Optional):

  • 1/2 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

Step 1: Prepare the Crumb Topping

  1. In a small bowl, mix together flour, brown sugar, and cinnamon.
  2. Stir in melted butter until the mixture is crumbly. Set aside.

Step 2: Preheat Oven & Prepare Muffin Pan

  1. Preheat oven to 375°F (190°C).
  2. Line a 12-cup muffin pan with liners or grease with non-stick spray.

Step 3: Mix Dry Ingredients

  1. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  2. Set aside.

Step 4: Prepare Wet Ingredients

  1. In a large mixing bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
  2. Add eggs one at a time, mixing well.
  3. Stir in vanilla extract.

Step 5: Combine Wet & Dry Ingredients

  1. Gradually add dry ingredients to wet ingredients, alternating with buttermilk.
  2. Mix until just combined (do not overmix).
  3. Gently fold in diced apples.

Step 6: Fill Muffin Cups & Add Crumb Topping

  1. Spoon batter evenly into muffin cups, filling about 3/4 full.
  2. Sprinkle crumb topping generously over each muffin.

Step 7: Bake the Muffins

  1. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Step 8: Prepare the Glaze (Optional)

  1. In a small bowl, whisk together powdered sugar, milk, and vanilla extract.
  2. Drizzle over cooled muffins.

Notes

  • Use Fresh Apples: Freshly diced apples give the best texture and flavor.
  • Don’t Overmix the Batter: Overmixing can lead to dense muffins.
  • Measure Flour Correctly: Use the spoon-and-level method to avoid dry muffins.
  • Let Muffins Cool Before Adding Glaze: This keeps the glaze from melting off.
  • Storage: Store in an airtight container at room temperature for 3 days or in the fridge for up to a week. Freeze for up to 3 months.
