For the Scones:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup cold unsalted butter, cubed
  • 1 large egg
  • 1/2 cup heavy cream (plus more for brushing)
  • 1 teaspoon vanilla extract
  • 1 cup peeled, finely chopped apple (Granny Smith or Honeycrisp)
  • 1/2 cup raisins

For the Vanilla Glaze (Optional):

  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  3. Cut in cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the egg, heavy cream, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Gently fold in the chopped apples and raisins.
  7. Turn the dough out onto a lightly floured surface and shape into a 1-inch thick circle.
  8. Cut the dough into 8 equal wedges and transfer to the prepared baking sheet.
  9. Brush the tops with additional heavy cream.
  10. Bake for 18–22 minutes or until golden brown.
  11. Let scones cool slightly on a wire rack.
  12. If using the glaze, whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle over cooled scones.
