For the Scones:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup cold unsalted butter, cubed
- 1 large egg
- 1/2 cup heavy cream (plus more for brushing)
- 1 teaspoon vanilla extract
- 1 cup peeled, finely chopped apple (Granny Smith or Honeycrisp)
- 1/2 cup raisins
For the Vanilla Glaze (Optional):
- 1 cup powdered sugar
- 2–3 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
- Cut in cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together the egg, heavy cream, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the chopped apples and raisins.
- Turn the dough out onto a lightly floured surface and shape into a 1-inch thick circle.
- Cut the dough into 8 equal wedges and transfer to the prepared baking sheet.
- Brush the tops with additional heavy cream.
- Bake for 18–22 minutes or until golden brown.
- Let scones cool slightly on a wire rack.
- If using the glaze, whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle over cooled scones.
