Ingredients

  • 1 lb lamb, cut into cubes
  • 1 cup lentils
  • 1 cup chickpeas, soaked overnight
  • 1 large onion, chopped
  • 2 tomatoes, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • 6 cups water or broth

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté the onions until translucent.
  2. Add the lamb cubes and brown on all sides.
  3. Stir in the tomatoes, lentils, chickpeas, and spices.
  4. Pour in the water or broth and bring to a boil.
  5. Reduce heat and let simmer for about 1.5 hours, or until the lamb is tender.
  6. Add the parsley and cilantro, and cook for an additional 10 minutes.
  7. Season with salt and pepper to taste before serving.
