Description
A traditional Moroccan soup made with lamb, lentils, chickpeas, and a blend of spices, perfect for warming up on cozy nights.
Ingredients

- 1 lb lamb, cut into cubes
- 1 cup lentils
- 1 cup chickpeas, soaked overnight
- 1 large onion, chopped
- 2 tomatoes, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon turmeric
- Salt and pepper to taste
- 6 cups water or broth
Instructions
- In a large pot, heat olive oil over medium heat and sauté the onions until translucent.
- Add the lamb cubes and brown on all sides.
- Stir in the tomatoes, lentils, chickpeas, and spices.
- Pour in the water or broth and bring to a boil.
- Reduce heat and let simmer for about 1.5 hours, or until the lamb is tender.
- Add the parsley and cilantro, and cook for an additional 10 minutes.
- Season with salt and pepper to taste before serving.
Notes
- Serve with lemon wedges for added flavor.
- This soup can be made a day in advance and tastes even better the next day.
