Step 1: Prepare the Ingredients
- Cook the bacon in a skillet over medium heat until crispy. Drain on paper towels and crumble.
- In the same pan, melt butter, then add mushrooms, garlic powder, and onion powder. Sauté until softened.
- In a large bowl, combine ground beef, breadcrumbs, eggs, milk, Worcestershire sauce, onion, and seasonings.
Step 2: Assemble the Meatloaf
- Preheat oven to 375°F (190°C).
- Line a loaf pan or baking sheet with parchment paper.
- Take half the meat mixture and form a flat layer.
- Sprinkle an even layer of Swiss cheese, bacon, and mushrooms over the meat.
- Cover with the remaining meat mixture and shape into a loaf.
Step 3: Add the Topping
- In a small bowl, mix ketchup, brown sugar, and Dijon mustard.

Step 4: Bake the Meatloaf
- Place the meatloaf in the preheated oven and bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).

Step 5: Rest and Serve
- Let the meatloaf rest for 10 minutes before slicing.
- Serve with mashed potatoes, roasted vegetables, or a fresh salad.
Notes
- Use High-Quality Ground Beef – 80/20 beef ensures a juicy, flavorful meatloaf.
- Don’t Overmix – Overworking the meat mixture can result in a dense and tough texture.
- Let It Rest – Allowing the meatloaf to rest before slicing helps retain moisture.
- Try Different Cheeses – Swap Swiss for cheddar, gouda, or provolone.
- Make It Spicy – Add red pepper flakes or jalapeños for a heat boost.
- Use a Meat Thermometer – Ensures the meatloaf is perfectly cooked without drying out.
- Make Mini Meatloaves – Form into individual portions and bake for 25-30 minutes for quicker cooking.
