For the Bananas Foster Topping:
- 2 large bananas, sliced
- 1/2 cup brown sugar
- 3 tablespoons butter
- 1/4 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 1/4 cup dark rum (optional)
- 1/4 cup heavy cream
- A pinch of salt
Instructions
- Prepare the Batter – Whisk together eggs, milk, vanilla, cinnamon, nutmeg, and sugar in a bowl.
- Soak the Bread – Dip each slice of brioche or challah into the mixture, ensuring even coating.
- Cook the French Toast – Melt butter in a skillet over medium heat, then cook the soaked bread for 3-4 minutes per side until golden brown.
- Make the Bananas Foster Topping – In the same pan, melt butter, then add brown sugar, cinnamon, and salt, stirring until smooth.
- Caramelize the Bananas – Toss in banana slices, cooking until coated in caramel sauce. Add rum (if using) and carefully flambé or let it cook off. Stir in vanilla and cream for a rich finish.
- Assemble & Serve – Plate the French toast, top with the bananas foster sauce, and serve with whipped cream or ice cream if desired.
