For the Chicken:
- 2 large chicken breasts, cut into bite-sized pieces
- 1 cup buttermilk (for marinating)
- 1 cup all-purpose flour

- ½ tsp black pepper
- 1 egg, beaten
- Vegetable oil (for frying)
For the Bang Bang Sauce:
- ½ cup mayonnaise
- ¼ cup sweet chili sauce
- 1 tbsp Sriracha sauce
- 1 tbsp honey
- 1 tsp rice vinegar
- ½ tsp garlic powder

Step 1: Marinate the Chicken
- In a bowl, mix buttermilk, salt, and black pepper.
- Add the chicken pieces and marinate for at least 30 minutes (or overnight for best results).
Step 2: Prepare the Breading Station
- In one bowl, whisk egg.
- In another bowl, mix flour, cornstarch, paprika, garlic powder, and a pinch of salt.
Step 3: Coat and Fry the Chicken
- Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
- Take each marinated chicken piece, dip it into the egg mixture, then coat it in the flour mixture.
- Fry the chicken in batches for 4-5 minutes until golden brown and crispy.
- Drain on a paper towel-lined plate.
Step 4: Make the Bang Bang Sauce
- In a bowl, mix mayonnaise, sweet chili sauce, Sriracha, honey, rice vinegar, and garlic powder.
- Whisk until smooth and creamy.
Step 5: Toss and Serve
- Toss the fried chicken pieces in the Bang Bang sauce.
- Serve immediately, garnished with chopped green onions or sesame seeds.
