For the Beef Mixture:
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 can (8 oz) tomato sauce
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
For the Pasta Layer:
- 2 cups egg noodles, cooked and drained
- 1 tablespoon butter
- 1 cup sour cream
- 1 cup cottage cheese
For the Topping:
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup Parmesan cheese
- 2 tablespoons fresh parsley, chopped (optional garnish)
Instructions
1. Prepare the Beef Mixture
- In a large skillet, cook the ground beef over medium heat until browned, breaking it apart with a spatula.
- Add the onions and garlic, cooking until softened.
- Stir in the diced tomatoes, tomato sauce, salt, pepper, Italian seasoning, and paprika.
- Reduce the heat and let the mixture simmer for about 10 minutes.
2. Prepare the Pasta Layer
- Cook the egg noodles according to the package instructions until al dente.
- Drain the noodles and mix with butter, sour cream, and cottage cheese.
3. Assemble the Casserole
- Preheat the oven to 350°F (175°C).
- Spread the pasta mixture evenly into a greased 9×13-inch baking dish.
- Top with the beef mixture, spreading it evenly over the pasta.
- Sprinkle the cheddar cheese and Parmesan cheese over the top.
4. Bake the Casserole
- Cover the dish with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for another 10-15 minutes, or until the cheese is bubbly and golden brown.
- Let it rest for 5 minutes before serving.
- Garnish with fresh parsley and enjoy!
