Ingredients

Scale

For the Beef Mixture:

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (8 oz) tomato sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika

For the Pasta Layer:

  • 2 cups egg noodles, cooked and drained
  • 1 tablespoon butter
  • 1 cup sour cream
  • 1 cup cottage cheese

For the Topping:

  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (optional garnish)

Instructions

1. Prepare the Beef Mixture

  1. In a large skillet, cook the ground beef over medium heat until browned, breaking it apart with a spatula.
  2. Add the onions and garlic, cooking until softened.
  3. Stir in the diced tomatoes, tomato sauce, salt, pepper, Italian seasoning, and paprika.
  4. Reduce the heat and let the mixture simmer for about 10 minutes.

2. Prepare the Pasta Layer

  1. Cook the egg noodles according to the package instructions until al dente.
  2. Drain the noodles and mix with butter, sour cream, and cottage cheese.

3. Assemble the Casserole

  1. Preheat the oven to 350°F (175°C).
  2. Spread the pasta mixture evenly into a greased 9×13-inch baking dish.
  3. Top with the beef mixture, spreading it evenly over the pasta.
  4. Sprinkle the cheddar cheese and Parmesan cheese over the top.

4. Bake the Casserole

  1. Cover the dish with aluminum foil and bake for 20 minutes.
  2. Remove the foil and bake for another 10-15 minutes, or until the cheese is bubbly and golden brown.
  3. Let it rest for 5 minutes before serving.
  4. Garnish with fresh parsley and enjoy!

Notes

  • Use Fresh Ingredients – Freshly shredded cheese melts better than pre-packaged shredded cheese.
  • Don’t Overcook the Pasta – Keep the noodles al dente so they don’t become mushy when baked.
  • Make it Spicy – Add a pinch of red pepper flakes for extra heat.
  • Let it Rest Before Serving – This helps the layers set, making it easier to serve.
  • Prepare in Advance – Assemble the casserole ahead of time and refrigerate until ready to bake.
