For the Zucchini Boats:
- 4 medium zucchinis, halved lengthwise
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
For the Filling:
- 1 pound lean ground beef
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 cup diced tomatoes (canned or fresh)
- 1/2 teaspoon red pepper flakes (optional)
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup cooked rice or quinoa (optional)
- 1/2 cup shredded mozzarella cheese
- 1/4 cup Parmesan cheese, grated
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
Step 1: Prepare the Zucchini
- Preheat the oven to 375°F (190°C).
- Slice zucchinis in half lengthwise and scoop out the insides with a spoon. Reserve 1/2 cup of the zucchini flesh.
- Brush the hollowed zucchinis with olive oil, season with salt and black pepper.
- Place in a baking dish and bake for 10 minutes.
Step 2: Cook the Beef Filling
- In a skillet, heat olive oil over medium heat.
- Add chopped onion and garlic, sauté until fragrant (about 2 minutes).
- Stir in ground beef, breaking it apart, and cook until browned.
- Mix in the reserved zucchini flesh, diced tomatoes, red pepper flakes, Italian seasoning, paprika, salt, and pepper. Cook for another 5 minutes.
- Stir in cooked rice or quinoa, if using. Remove from heat and mix in half of the shredded cheese.
Step 3: Assemble and Bake
- Spoon the beef mixture into the zucchini boats evenly.
- Top with remaining mozzarella and Parmesan cheese.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake 5-10 more minutes until the cheese is melted and bubbly.
Step 4: Garnish and Serve
- Remove from oven and let cool for a few minutes.
- Sprinkle with fresh parsley before serving.
