  • 5.3 oz (150 g) vegan butter, melted (or use coconut oil)

For the Lime Layer:

  • 1 ¼ cups (300 ml) coconut milk (full-fat canned)
  • ¼ cup (60 ml) agave syrup (or other liquid sweetener)
  • Juice of 2 limes (about 80 ml)
  • ¾ tsp agar powder

For the Blue Layer:

  • 34 tbsp water
  • 1 tbsp blue spirulina powder
  • 1 ⅓ cups (320 ml) coconut milk
  • ⅙ cup (40 ml) agave syrup
  • ¾ tsp agar powder
  • 1 tsp vanilla extract (optional)

For Garnish (Optional):

  • ½ cup (75 g) blueberries
  • ½ cup (75 g) blackberries
  • Sliced limes

Instructions

Prepare the Cookie Crust

  • Crush the vegan cookies into fine crumbs using a food processor or by hand.
  • Mix with melted vegan butter until well combined.
  • Press into a 9-inch tart pan with a removable bottom.
  • Chill in the freezer for 15 minutes or in the refrigerator for 30 minutes to set. (Optional: Pre-bake at 350°F/175°C for 8–10 minutes for a firmer crust.)

Make the Lime Layer

  • In a saucepan, whisk together coconut milk and agar powder until dissolved.
  • Bring to a boil, then simmer for 1–2 minutes, stirring constantly.
  • Remove from heat and stir in lime juice and agave syrup.
  • Let cool slightly, then pour over the chilled crust.
  • Refrigerate for 1 hour or until set.

Prepare the Blue Layer

  • Mix blue spirulina with 3–4 tablespoons of water until smooth.
  • In a separate saucepan, whisk coconut milk and agar powder, bring to a boil, then simmer for 1–2 minutes.
  • Remove from heat and add agave syrup, vanilla (if using), and spirulina mixture.
  • Carefully pour the blue layer over the lime layer.
  • Refrigerate for at least 2 hours until fully set.

Garnish and Serve

  • Once set, gently remove the tart from the pan.
  • Decorate with fresh blueberries, blackberries, and lime slices.
