Ingredients
Scale
For the Muffins:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- ½ teaspoon salt
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon (optional)
- ½ cup unsalted butter, melted
- 2 large eggs
- ½ cup whole milk (or buttermilk for extra moisture)
- 1 ½ cups fresh or frozen blueberries (if using frozen, do not thaw)
For the Crumb Topping:
- ½ cup all-purpose flour
- ¼ cup granulated sugar
- ¼ cup brown sugar
- ½ teaspoon cinnamon
- ¼ cup cold unsalted butter, cubed
Optional Topping:
- 1 tablespoon coarse sugar (for added crunch)
- 1 teaspoon lemon zest (for a citrusy flavor)
Instructions
Step 1: Prepare Your Baking Equipment
- Preheat your oven to 375°F (190°C).
- Line a 12-cup muffin tin with paper liners or grease each cup.
Step 2: Make the Crumb Topping
- In a small bowl, mix flour, granulated sugar, brown sugar, and cinnamon.
- Add the cold, cubed butter and use a fork or pastry cutter to mix until it resembles coarse crumbs.
- Set aside in the refrigerator while preparing the muffin batter.
Step 3: Mix the Dry Ingredients
- In a large mixing bowl, whisk together flour, sugar, salt, baking powder, baking soda, and cinnamon.
Step 4: Prepare the Wet Ingredients
- In another bowl, whisk together melted butter, eggs, milk, and vanilla extract.
- Slowly pour the wet ingredients into the dry ingredients, stirring gently until just combined. Do not overmix!
Step 5: Fold in the Blueberries
- Gently fold in the blueberries using a spatula. If using frozen blueberries, toss them in a tablespoon of flour first to prevent sinking.
Step 6: Fill the Muffin Cups
- Divide the batter evenly among the muffin cups, filling each about ¾ full.
- Sprinkle crumb topping generously over each muffin.
Step 7: Bake the Muffins
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely
Notes
- Use Fresh Blueberries for Best Flavor: Fresh berries give the best texture, but frozen work well too (just don’t thaw them first!).
- Don’t Overmix the Batter: Overmixing will make the muffins dense instead of light and fluffy.
- Make Extra Crumb Topping: If you love a crunchy topping, double the streusel for extra texture.
- Use Buttermilk for Extra Moisture: Buttermilk adds a tender crumb and balances the sweetness.
- Try Different Flavors: Add lemon zest, almond extract, or nutmeg for a twist.
