Main Ingredients:
- 1 loaf brioche bread, cut into 1-inch cubes
- 6 large eggs
- 2 cups whole milk
- ½ cup heavy cream
- ½ cup granulated sugar
- ¼ cup brown sugar
- 2 tsp vanilla extract
- 1 tsp ground cinnamon
- ½ tsp nutmeg
- ¼ tsp salt
Topping:
- ¼ cup butter, melted
- ½ cup brown sugar
- 1 tsp cinnamon
- ¼ cup chopped pecans (optional)
- Powdered sugar and maple syrup for serving
Instructions
1. Prepare the Bread
- Cut the brioche bread into 1-inch cubes.
- Arrange the cubes in a greased 9×13-inch baking dish.
2. Make the Custard Mixture
- In a large bowl, whisk together the eggs, milk, heavy cream, granulated sugar, brown sugar, vanilla extract, cinnamon, nutmeg, and salt.
- Pour the custard mixture evenly over the bread cubes.
- Gently press down the bread so it absorbs the mixture.
- Cover and refrigerate for at least 4 hours, or overnight for best results.
3. Make the Topping
- In a small bowl, mix the melted butter, brown sugar, and cinnamon.
- Stir in the pecans if using.
- Sprinkle the topping evenly over the soaked bread.
4. Bake the Casserole
- Preheat the oven to 350°F (175°C).
- Remove the casserole from the refrigerator and let it sit at room temperature for 15-20 minutes.
- Bake uncovered for 40-45 minutes, until the top is golden brown and set.
- Let the casserole cool slightly before serving.
5. Serve and Enjoy
- Dust with powdered sugar.
- Drizzle with maple syrup.
- Garnish with fresh berries or whipped cream if desired.
Notes
- Use Stale Bread: Day-old brioche absorbs the custard better and prevents sogginess.
- Overnight Soaking is Best: This enhances flavor and ensures a creamy texture.
- Don’t Overbake: The casserole should be set but still slightly soft in the center.
- Try Different Breads: Challah or thick Texas toast works well if brioche isn’t available.
- Make It Extra Crunchy: Add more pecans or use crushed granola for a crispier top.

- Cook Time: 40-45 minutes
