  • 1 cup uncooked long-grain white rice (or brown rice)
  • 2 cups chicken broth (or vegetable broth)
  • 1 can (14.5 oz) diced tomatoes, with juices
  • 1 tsp Cajun seasoning (adjust to taste)
  • ½ tsp smoked paprika
  • ½ tsp thyme (dried or fresh)
  • ¼ tsp black pepper
  • ½ tsp salt (adjust based on broth used)
  • 1 cup frozen peas or corn (optional)
  • 2 green onions, chopped (for garnish)
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  • Sauté the Sausage: Heat a large skillet over medium-high heat. Add olive oil and sliced sausage. Cook for 3-4 minutes, stirring occasionally, until browned.
  • Add Vegetables and Garlic: Stir in the bell pepper, onion, and garlic. Cook for 3-5 minutes until softened.
  • Toast the Rice: Add uncooked rice to the skillet, stirring for 1-2 minutes to toast it.
  • Add Broth and Tomatoes: Pour in chicken broth and diced tomatoes with their juices. Stir in Cajun seasoning, smoked paprika, thyme, black pepper, and salt.
  • Simmer and Cook Rice: Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes (or until rice is tender and liquid is absorbed).
  • Add Optional Ingredients: Stir in peas or corn during the last 5 minutes of cooking.
  • Garnish and Serve: Fluff the rice with a fork, sprinkle with green onions and parsley, and serve hot.
