- 1 smoked sausage (Andouille, Kielbasa, or chorizo), sliced
- 1 bell pepper, diced (red, green, or yellow)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup uncooked long-grain white rice (or brown rice)
- 2 cups chicken broth (or vegetable broth)
- 1 can (14.5 oz) diced tomatoes, with juices
- 1 tsp Cajun seasoning (adjust to taste)
- ½ tsp smoked paprika
- ½ tsp thyme (dried or fresh)
- ¼ tsp black pepper
- ½ tsp salt (adjust based on broth used)
- 1 cup frozen peas or corn (optional)
- 2 green onions, chopped (for garnish)
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Sauté the Sausage: Heat a large skillet over medium-high heat. Add olive oil and sliced sausage. Cook for 3-4 minutes, stirring occasionally, until browned.
- Add Vegetables and Garlic: Stir in the bell pepper, onion, and garlic. Cook for 3-5 minutes until softened.
- Toast the Rice: Add uncooked rice to the skillet, stirring for 1-2 minutes to toast it.
- Add Broth and Tomatoes: Pour in chicken broth and diced tomatoes with their juices. Stir in Cajun seasoning, smoked paprika, thyme, black pepper, and salt.
- Simmer and Cook Rice: Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes (or until rice is tender and liquid is absorbed).
- Add Optional Ingredients: Stir in peas or corn during the last 5 minutes of cooking.
- Garnish and Serve: Fluff the rice with a fork, sprinkle with green onions and parsley, and serve hot.
