Ingredients

Scale

For the Base:

  • 2 cups (200g) plain sweet biscuits (like Digestives or Graham Crackers), crushed
  • 1/2 cup (115g) unsalted butter, melted
  • For the Caramel Layer:
  • 1 can (395g) sweetened condensed milk
  • 2 tablespoons golden syrup (or light corn syrup)
  • 1/4 cup (55g) brown sugar
  • 2 tablespoons unsalted butter

For the Chocolate Topping:

  • 200g (7 oz) dark or milk chocolate, chopped
  • 1 tablespoon vegetable oil or butter (optional, for a glossy finish)

Instructions

Step 1: Prepare the Base

  1. Preheat your oven to 350°F (175°C).
  2. Line a 9-inch square baking pan with parchment paper.
  3. In a bowl, combine crushed biscuits and melted butter.
  4. Press the mixture evenly into the base of the prepared pan.
  5. Bake for 10 minutes, then set aside to cool slightly.

Step 2: Make the Caramel Layer

  1. In a medium saucepan over low-medium heat, combine the sweetened condensed milk, brown sugar, golden syrup, and butter.
  2. Stir constantly for 10–12 minutes until the mixture thickens and turns a rich golden caramel color.
  3. Pour the caramel over the baked biscuit base and spread evenly.
  4. Return the pan to the oven and bake for 10 more minutes at 320°F (160°C) to help set the caramel.
  5. Allow it to cool completely at room temperature.

Step 3: Add the Chocolate Topping

  1. Melt the chocolate (and optional butter/oil) in a microwave-safe bowl or using a double boiler.
  2. Pour the melted chocolate over the cooled caramel layer and spread it out smoothly with a spatula.
  3. Refrigerate for at least 2 hours or until fully set.

Step 4: Slice and Serve

  1. To get clean slices, use a sharp knife dipped in hot water.
  2. Wipe the blade between cuts for perfect edges.
  3. Store in an airtight container in the fridge for up to 7 days or freeze for up to 3 months.
