  • Author: isabil
  • Total Time: 35 minutes
  • Yield: 12 piroshki 1x

Ingredients

Scale

For the Dough:

  • 3 ½ cups all-purpose flour
  • 1 cup warm milk (or water for a dairy-free version)
  • 2 ½ tsp active dry yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 2 tbsp vegetable oil or melted butter

For the Filling:

  • 3 large hard-boiled eggs, finely chopped
  • 1 ½ cups shredded cheese (cheddar, gouda, or feta)
  • ½ cup ricotta or cottage cheese
  • 2 tbsp chopped fresh dill or parsley
  • ½ tsp black pepper
  • ½ tsp salt

For Frying or Baking:

  • 1 egg yolk (for egg wash if baking)
  • 1 cup vegetable oil (for frying, if applicable)

Instructions

Step 1: Prepare the Dough

  1. In a small bowl, mix warm milk, yeast, and sugar. Let it sit for 10 minutes until foamy.
  2. In a large mixing bowl, combine flour and salt.
  3. Add the yeast mixture and vegetable oil (or butter) to the flour.
  4. Knead the dough for 8-10 minutes until smooth and elastic.
  5. Cover with a clean towel and let it rise for 1 hour, or until doubled in size.

Step 2: Prepare the Filling

  1. In a bowl, combine chopped eggs, shredded cheese, ricotta, herbs, salt, and pepper.
  2. Mix well until the ingredients form a creamy and uniform filling.

Step 3: Assemble the Piroshki

  1. Divide the risen dough into 12 equal portions.
  2. Roll each piece into a small circle (about 4-5 inches in diameter).
  3. Place 1-2 tablespoons of filling in the center of each dough circle.
  4. Fold the dough over the filling, pinching the edges together to seal.
  5. Shape each piroshki into an oval or crescent.

Step 4: Choose Your Cooking Method

Option 1: Frying (Traditional Method)

  1. Heat vegetable oil in a deep pan over medium heat.
  2. Fry the piroshki for 2-3 minutes per side until golden brown.
  3. Remove and drain on paper towels.

Option 2: Baking (Healthier Alternative)

  1. Preheat the oven to 375°F (190°C).
  2. Brush the piroshki with egg wash for a golden crust.
  3. Bake for 18-20 minutes, or until golden brown.

Notes

Use fresh yeast for a better rise and fluffier texture.
Let the dough rest longer for an even softer interior.
For extra crunch, brush the edges with olive oil before baking.
Add cheese like grated cheddar or feta for a flavorful twist.
Store leftovers in an airtight container for up to 4 days or freeze for up to 3 months
