For the Dough:

- ½ cup ricotta or cottage cheese
- 2 tbsp chopped fresh dill or parsley

- 1 egg yolk (for egg wash if baking)
- 1 cup vegetable oil (for frying, if applicable)
Instructions
Step 1: Prepare the Dough
- In a small bowl, mix warm milk, yeast, and sugar. Let it sit for 10 minutes until foamy.
- In a large mixing bowl, combine flour and salt.
- Add the yeast mixture and vegetable oil (or butter) to the flour.
- Knead the dough for 8-10 minutes until smooth and elastic.
- Cover with a clean towel and let it rise for 1 hour, or until doubled in size.
Step 2: Prepare the Filling
- In a bowl, combine chopped eggs, shredded cheese, ricotta, herbs, salt, and pepper.
- Mix well until the ingredients form a creamy and uniform filling.
Step 3: Assemble the Piroshki
- Divide the risen dough into 12 equal portions.
- Roll each piece into a small circle (about 4-5 inches in diameter).
- Place 1-2 tablespoons of filling in the center of each dough circle.
- Fold the dough over the filling, pinching the edges together to seal.
- Shape each piroshki into an oval or crescent.
Step 4: Choose Your Cooking Method
Option 1: Frying (Traditional Method)
- Heat vegetable oil in a deep pan over medium heat.
- Fry the piroshki for 2-3 minutes per side until golden brown.
- Remove and drain on paper towels.
Option 2: Baking (Healthier Alternative)
- Preheat the oven to 375°F (190°C).
- Brush the piroshki with egg wash for a golden crust.
- Bake for 18-20 minutes, or until golden brown.
