Scale
Base Ingredients:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ teaspoon garlic powder (optional)
- ½ teaspoon onion powder (optional)
- ½ cup cold unsalted butter, cubed
- 1 cup shredded sharp cheddar cheese (or gruyère/parmesan)
- 2 tablespoons finely chopped fresh herbs (thyme, rosemary, or chives)
- ¾ cup milk or buttermilk
Optional Add-Ins:
- ½ teaspoon smoked paprika or cayenne pepper (for spice)
- 1 tablespoon sesame seeds or poppy seeds (for texture)
- ¼ cup grated parmesan (for extra cheesiness)
Instructions
Step 1: Prepare the Dough
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together flour, baking powder, salt, and optional seasonings.
- Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Stir in the cheese and fresh herbs until well combined.
- Gradually add milk or buttermilk, mixing until a soft dough forms.
Step 2: Shape the Biscuits or Crackers
- For Biscuits: Roll out the dough to about ½-inch thickness and cut using a round biscuit cutter.
- For Crackers: Roll the dough thinner (¼-inch thick) and cut into squares or rectangles using a knife or pizza cutter.
Step 3: Bake
- Arrange biscuits or crackers on the prepared baking sheet, leaving a little space between them.
- Bake for 12-15 minutes for crackers and 15-18 minutes for biscuits, or until golden brown.
- Let them cool for a few minutes before serving.
Notes
- Use cold butter: This ensures flakiness.
- Don’t overmix: Overworking the dough can make the biscuits tough.
- Freshly grate cheese: Pre-packaged cheese has anti-caking agents that can affect texture.
- Chill the dough before baking: Helps crackers hold their shape.
- For extra crispiness: Bake crackers a few extra minutes until golden brown.
