Ingredients
Scale
- 1.5 lbs (680g) ground beef (or a mix of beef and pork)
- 1 cup breadcrumbs (or gluten-free alternative)
- 2 large eggs
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced (optional)
- 1 cup tomato sauce
- 2 cups shredded cheese (cheddar, mozzarella, or a blend)
- 2 medium potatoes, thinly sliced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tsp Italian seasoning
- Cooking spray or oil (for greasing the dish)
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Meatloaf Mixture: In a large bowl, combine the ground beef, breadcrumbs, eggs, chopped onion, minced garlic, salt, pepper, paprika, and Italian seasoning. Mix until well combined.
- Layer the Casserole: Grease a 9×13-inch casserole dish with cooking spray or oil. Spread the meatloaf mixture evenly across the bottom.
- Add Tomato Sauce: Pour the tomato sauce over the meatloaf mixture and spread it evenly.
- Layer Potatoes: Arrange the thinly sliced potatoes over the tomato sauce.
- Top with Cheese: Sprinkle the shredded cheese evenly over the potatoes.
- Bake: Place the casserole in the preheated oven and bake for 45-50 minutes, or until the meat is cooked through and the cheese is bubbly and golden.
- Rest and Serve: Let the casserole rest for 10 minutes before serving. This allows the flavors to meld and makes it easier to slice.
Notes
- Use Fresh Ingredients: Fresh garlic, onions, and spices enhance the flavor.
- Don’t Overmix the Meat: Overmixing can make the meatloaf dense. Mix just until combined.
- Customize the Cheese: Try a blend of cheddar, mozzarella, and Parmesan for extra flavor.
- Add Veggies: Incorporate spinach, mushrooms, or zucchini for added nutrition.
- Make It Ahead: Assemble the casserole, cover it, and refrigerate for up to 24 hours before baking.
- Freeze for Later: This casserole freezes well. Wrap it tightly and freeze for up to 3 months.
- Reheat Properly: Reheat in the oven at 350°F (175°C) for best results.
