Creamy Chicken with Sun-Dried Tomatoes: A Flavor-Packed Delight

  • Author: isabil

Ingredients

Scale

Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper (to taste)
  • 2 tablespoons olive oil

Sauce:

  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional for spice)
  • Fresh parsley (for garnish)

Instructions

1. Prepare the Chicken

Start by seasoning your chicken breasts generously with salt and black pepper on both sides. Heat olive oil in a large skillet over medium heat and sear the chicken until golden brown on each side, approximately 4-5 minutes per side. Once cooked, set the chicken aside.

2. Make the Creamy Sauce

In the same skillet, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Stir in the heavy cream and chicken broth, whisking to combine.

3. Incorporate the Parmesan and Tomatoes

Reduce the heat to low and mix in the Parmesan cheese, stirring until it melts into the sauce. Add the chopped sun-dried tomatoes, Italian seasoning, and red pepper flakes. Let the sauce simmer gently for 2-3 minutes to allow the flavors to meld.

4. Return the Chicken to the Skillet

Place the cooked chicken breasts back into the skillet, spooning the sauce over the top. Let the chicken simmer in the sauce for another 5-7 minutes, ensuring it is fully cooked and infused with flavor.

5. Garnish and Serve

Sprinkle fresh parsley over the dish before serving. Pair it with your choice of sides, such as pasta, mashed potatoes, or a crusty baguette to soak up the sauce.

Notes

  • Use Fresh Garlic: Freshly minced garlic adds a depth of flavor that powdered versions can’t match.
  • Choose Quality Sun-Dried Tomatoes: Opt for tomatoes packed in oil for extra richness, and drain them before chopping.
  • Don’t Overcook the Chicken: Searing the chicken first locks in moisture, but avoid overcooking during the final simmer.
  • Adjust the Sauce Thickness: If the sauce is too thick, add a splash of chicken broth; if it’s too thin, let it reduce for a few extra minutes
