- 8 oz chicken sausages
- 2 medium zucchinis, sliced
- 2 cups cherry tomatoes, halved
- 8 oz pasta (your choice)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add the chicken sausages and cook until browned, about 5-7 minutes.
- Add the minced garlic and cook for an additional minute.
- Add the sliced zucchini and cherry tomatoes to the skillet. Season with salt and pepper.
- Cook until the vegetables are tender, about 5-7 minutes.
- Combine the cooked pasta with the sausage and vegetable mixture. Toss to combine.
- Serve hot, garnished with fresh basil.
Notes
- Feel free to substitute chicken sausages with turkey or vegetarian sausages.
- For added flavor, sprinkle some grated Parmesan cheese on top before serving.
