A flavorful and tender Chipotle Beef Barbacoa recipe perfect for tacos, burritos, or rice.
Ingredients

- 3 lbs beef chuck roast, trimmed and cut into large chunks
- 2 tablespoons olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2–3 chipotle peppers in adobo sauce, chopped
- 1 tablespoon adobo sauce (from the chipotle can)
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup beef broth
- 1/4 cup apple cider vinegar
- Juice of 1 lime
- Fresh cilantro, for garnish (optional)
Instructions
- In a large skillet, heat olive oil over medium-high heat. Sear the beef chunks on all sides until browned, about 3-4 minutes per side. Remove from skillet and set aside.
- In the same skillet, add chopped onion and cook until softened, about 5 minutes. Stir in minced garlic and cook for an additional minute.
- In a slow cooker, combine the seared beef, cooked onion and garlic, chipotle peppers, adobo sauce, cumin, oregano, smoked paprika, salt, black pepper, beef broth, apple cider vinegar, and lime juice.
- Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender and easily shredded with a fork.
- Once cooked, shred the beef in the slow cooker using two forks and mix it with the juices.
- Serve the barbacoa in tacos, burritos, or over rice, and garnish with fresh cilantro if desired.
Notes
- Adjust the number of chipotle peppers based on your spice preference.
- Leftovers can be stored in the refrigerator for up to 3 days.
- This recipe can also be made in an Instant Pot for a quicker cooking time.
