Description

Ingredients

  • 3 lbs beef chuck roast, trimmed and cut into large chunks
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 23 chipotle peppers in adobo sauce, chopped
  • 1 tablespoon adobo sauce (from the chipotle can)
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup beef broth
  • 1/4 cup apple cider vinegar
  • Juice of 1 lime
  • Fresh cilantro, for garnish (optional)

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Sear the beef chunks on all sides until browned, about 3-4 minutes per side. Remove from skillet and set aside.
  2. In the same skillet, add chopped onion and cook until softened, about 5 minutes. Stir in minced garlic and cook for an additional minute.
  3. In a slow cooker, combine the seared beef, cooked onion and garlic, chipotle peppers, adobo sauce, cumin, oregano, smoked paprika, salt, black pepper, beef broth, apple cider vinegar, and lime juice.
  4. Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender and easily shredded with a fork.
  5. Once cooked, shred the beef in the slow cooker using two forks and mix it with the juices.
  6. Serve the barbacoa in tacos, burritos, or over rice, and garnish with fresh cilantro if desired.

  • Adjust the number of chipotle peppers based on your spice preference.
  • Leftovers can be stored in the refrigerator for up to 3 days.
