  • 1 lb boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 tablespoons chipotle chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • 1/2 cup shredded cheese (cheddar or Monterey Jack)
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges for serving

Instructions

  1. In a bowl, combine olive oil, chipotle chili powder, garlic powder, onion powder, smoked paprika, cumin, salt, and black pepper. Add chicken thighs and coat well with the marinade. Let it marinate for at least 30 minutes (or up to overnight in the fridge).
  2. While the chicken marinates, rinse the rice under cold water until the water runs clear. In a medium saucepan, combine rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is tender and liquid is absorbed. Fluff with a fork.
  3. Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes per side, or until fully cooked and internal temperature reaches 165°F (75°C). Remove from heat and let rest for a few minutes before slicing.
  4. In serving bowls, layer the cooked rice, black beans, corn, diced tomatoes, sliced chicken, avocado, and shredded cheese.
  5. Garnish with fresh cilantro and serve with lime wedges on the side.
