  • 1 cup cherry tomatoes, halved
  • ½ cup shredded red cabbage
  • 2 tablespoons crumbled cotija or feta cheese
  • Fresh lime wedges for garnish

Optional Sauce:

  • ¼ cup Greek yogurt or sour cream
  • 1 tablespoon honey
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon lime juice

Instructions

  • Marinate the Chicken: Combine honey, chipotle chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper in a bowl. Add the chicken and coat evenly. Marinate for 30 minutes.
