- 1 cup black beans, drained and rinsed
- 1 cup sweet corn, cooked
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- ½ cup shredded red cabbage
- 2 tablespoons crumbled cotija or feta cheese
- Fresh lime wedges for garnish
Optional Sauce:
- ¼ cup Greek yogurt or sour cream
- 1 tablespoon honey
- 1 teaspoon chipotle chili powder
- 1 teaspoon lime juice
Instructions
- Marinate the Chicken: Combine honey, chipotle chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper in a bowl. Add the chicken and coat evenly. Marinate for 30 minutes.
- Cook the Chicken: Heat olive oil in a skillet over medium heat. Cook the chicken for 6-8 minutes per side or until it reaches 165°F (75°C). Let rest for 5 minutes and slice.
- Prepare the Rice: Cook rice according to package instructions. Mix with lime juice, cilantro, and salt.
- Assemble the Bowls: Divide the rice among bowls. Add chicken slices, black beans, corn, avocado, cherry tomatoes, red cabbage, and cotija cheese.
- Make the Sauce (Optional): Whisk together Greek yogurt, honey, chipotle chili powder, and lime juice. Drizzle over bowls.
