For the Muffins:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 3/4 cup milk (whole or almond milk)
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 large egg
For the Cinnamon Sugar Swirl:
- 1/2 cup brown sugar, packed
- 1 1/2 teaspoons ground cinnamon
- 2 tablespoons unsalted butter, melted
For the Glaze:
- 1/2 cup powdered sugar
- 1 tablespoon milk (adjust for desired consistency)
- 1/2 teaspoon vanilla extract
Instructions
- Preheat & Prepare: Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease lightly.
- Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
- Prepare Wet Ingredients: In another bowl, mix milk, melted butter, vanilla extract, and egg until smooth.
- Combine Mixtures: Slowly add wet ingredients to dry ingredients, stirring until just combined. Do not overmix.
- Make Cinnamon Swirl: In a small bowl, mix brown sugar, cinnamon, and melted butter.
- Fill Muffin Cups: Fill each muffin cup halfway with batter, then spoon a teaspoon of the cinnamon sugar mixture on top. Add more batter until cups are ¾ full and swirl with a toothpick.
- Bake: Bake for 16-18 minutes, or until a toothpick inserted into the center comes out clean.
- Prepare the Glaze: While muffins cool, whisk together powdered sugar, milk, and vanilla extract until smooth.
- Drizzle & Serve: Drizzle the glaze over warm muffins and enjoy!
