- 2 large boneless, skinless chicken breasts (halved and pounded thin)
- Salt and black pepper (to taste)
- 1/2 cup all-purpose flour (for dredging)
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter, divided
- 8 ounces cremini or button mushrooms (sliced)
- 2 cloves garlic (minced)
- 1/3 cup shallots (finely chopped)
- 3/4 cup dry Marsala wine
- 1/2 cup low-sodium chicken broth
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- 1/4 cup heavy cream (optional, for a creamier sauce)
- Fresh parsley (for garnish)
Instructions
Step 1: Prepare the Chicken
- Place the chicken breasts between two sheets of plastic wrap.
- Use a meat mallet to pound them to about 1/4-inch thickness.
- Season both sides with salt and black pepper.
- Dredge the chicken in all-purpose flour, shaking off the excess.
Step 2: Sear the Chicken
- Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat.
- Add the chicken and cook until golden brown, about 3-4 minutes per side.
- Transfer the chicken to a plate and set aside.
Step 3: Cook the Mushrooms & Aromatics
- In the same skillet, melt another 1 tablespoon butter.
- Add the mushrooms and cook until tender (about 5 minutes).
- Stir in the garlic and shallots, cooking until fragrant.
Step 4: Deglaze with Marsala Wine
- Pour in the Marsala wine, scraping up browned bits from the skillet.
- Let it simmer for 2 minutes to cook off the alcohol.
- Add chicken broth and thyme, stirring to combine.
Step 5: Simmer the Sauce
- Lower the heat and let the sauce reduce for 5 minutes.
- Stir in heavy cream (if using) and return the chicken to the pan.
- Simmer for another 5 minutes, coating the chicken with the sauce.
Step 6: Garnish & Serve
- Remove from heat and sprinkle with fresh parsley.
- Serve immediately with pasta, mashed potatoes, or roasted vegetables.
