For the Cake:

For the Frosting:
- 8 ounces cream cheese (softened to cool room temperature)
- 1 cup powdered sugar
- u00be teaspoon vanilla extract
- 2u00bc cups heavy whipping cream (cold, straight from the fridge)
Instructions
For the Cake:
- Preheat your oven to 350u00b0F (175u00b0C).
- Grease and line three 8-inch cake pans with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- Using a stand or hand mixer, beat sugar, oil, eggs, egg whites, vanilla, and almond extract until combined.
- Add sour cream and mix until smooth. Gradually alternate adding the flour mixture and milk, starting and ending with the flour mixture. Mix until just combined.
- Divide the batter evenly among the prepared pans.
- Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
- Cool completely on a wire rack before assembly.
For the Filling:
- Combine 2u00bd cups of strawberries with 2 tablespoons of strawberry jam. Let sit for 10-15 minutes to enhance the flavors.
- Reserve u00bd cup of strawberries for garnish.
For the Frosting:
- Beat cream cheese, powdered sugar, and vanilla extract until smooth.
- Gradually add heavy whipping cream while beating on medium speed. Once combined, increase speed to high and whip until stiff peaks form.
Assembly:
- Place one cake layer on a serving plate. Spread with u2153 of the frosting and top with 1u00bc cups of the strawberry filling.
- Repeat with the second layer.
- Top the third layer with the remaining frosting. Garnish with reserved strawberries and whole strawberries if desired.
