Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 medium sweet potatoes, peeled and diced
  • 1 can (14 oz) coconut milk
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 tbsp fresh lime juice
  • Fresh cilantro for garnish

Instructions

  1. In a pot, boil sweet potatoes until tender, about 15 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add shrimp to the skillet, season with salt, pepper, and paprika. Cook until shrimp are pink and opaque, about 3-4 minutes.
  4. Pour in coconut milk and lime juice, stirring to combine. Let simmer for 5 minutes.
  5. Serve shrimp over sweet potato rice and garnish with fresh cilantro.
