Instructions

- Press the mixture into the bottom of the lined pan. Place in the fridge to chill while you prepare the chia layer.
- Mix the Pudding Layer: In a medium bowl, whisk together coconut milk, chia seeds, maple syrup, lime zest, lime juice, and vanilla extract. Let the mixture sit for 10 minutes, then whisk again to avoid clumping.
- Assemble: Pour the chia mixture over the crust and smooth it out evenly.
- Chill: Cover the pan and refrigerate for at least 4 hours or overnight until firm.
- Slice and Serve: Once set, lift the bars from the pan using the parchment paper. Slice into 9 bars. Garnish with lime zest or toasted coconut if desired.
