For the Chicken:

For the Cilantro Lime Rice:
- 1 cup jasmine or basmati rice
- 2 cups water
- 1 tablespoon butter or olive oil
- 1/2 teaspoon salt
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 1 teaspoon lime zest
For the Black Beans:
- 1 can black beans, drained and rinsed
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1 tablespoon olive oil
- 1/4 cup water
For the Toppings:
- 1 cup chopped romaine lettuce
- 1/2 cup pico de gallo
- 1/2 cup corn salsa
- 1/2 cup shredded cheese (cheddar or Monterey Jack)
- 1/4 cup sour cream or Greek yogurt
- 1/2 avocado, sliced
Instructions
Step 1: Marinate and Cook the Chicken
- In a bowl, mix olive oil, adobo sauce, chili powder, cumin, paprika, garlic powder, onion powder, salt, black pepper, lime juice, and apple cider vinegar.
- Add the chicken thighs, ensuring they are evenly coated.
- Let marinate for at least 30 minutes (or overnight for deeper flavor).
- Heat a skillet or grill over medium-high heat and cook chicken for 6-7 minutes per side until fully cooked.
- Let rest for 5 minutes, then chop into bite-sized pieces.
Step 2: Make Cilantro Lime Rice
- Rinse jasmine rice under cold water.
- In a saucepan, bring water, butter, and salt to a boil.
- Add rice, cover, and reduce heat. Let simmer for 15 minutes.
- Remove from heat and fluff with a fork.
- Stir in chopped cilantro, lime juice, and lime zest.
Step 3: Prepare the Black Beans
- Heat a skillet over medium heat and add olive oil.
- Stir in black beans, cumin, garlic powder, and salt.
- Add water and simmer for 5 minutes, stirring occasionally.
- Remove from heat and set aside.
Step 4: Assemble the Burrito Bowl
- In a bowl, start with a base of cilantro lime rice.
- Add black beans and grilled chicken.
- Top with lettuce, pico de gallo, corn salsa, shredded cheese, sour cream, and avocado.
- Drizzle with extra lime juice if desired.
- Enjoy immediately or pack for meal prep.
