- 2 cups cooked corned beef, diced
- 2 medium russet potatoes, peeled and cubed
- 1 small onion, finely chopped
- 2 tbsp butter or oil
- 1 clove garlic, minced (optional)
- ½ tsp smoked paprika
- Salt & pepper to taste
- 2 tbsp fresh parsley, chopped (for garnish)
- 2 eggs (optional, for serving)
Instructions
- Boil the potatoes: In a pot of salted water, parboil the cubed potatoes for 5 minutes. Drain and set aside.
- Sauté onions: Heat butter or oil in a skillet over medium heat. Add onions and cook until soft.
- Add potatoes: Stir in the boiled potatoes, pressing them down lightly. Let them cook undisturbed for 3-5 minutes until golden brown.
- Add corned beef: Stir in the diced corned beef, spreading it evenly. Cook for another 5-7 minutes, pressing down occasionally for crispy edges.
- Season & serve: Add smoked paprika, salt, and pepper. If using eggs, create small wells in the hash and crack eggs into them. Cook until eggs reach desired doneness.
- Garnish with parsley and serve hot.
