Description

Learn how to make the best Corned Beef Hash with crispy potatoes, savory beef & bold flavors. A must-try comfort dish!

Ingredients

Scale
  • 2 cups cooked corned beef, diced
  • 2 medium russet potatoes, peeled and cubed
  • 1 small onion, finely chopped
  • 2 tbsp butter or oil
  • 1 clove garlic, minced (optional)
  • ½ tsp smoked paprika
  • Salt & pepper to taste
  • 2 tbsp fresh parsley, chopped (for garnish)
  • 2 eggs (optional, for serving)

Instructions

  • Boil the potatoes: In a pot of salted water, parboil the cubed potatoes for 5 minutes. Drain and set aside.
  • Sauté onions: Heat butter or oil in a skillet over medium heat. Add onions and cook until soft.
  • Add potatoes: Stir in the boiled potatoes, pressing them down lightly. Let them cook undisturbed for 3-5 minutes until golden brown.
  • Add corned beef: Stir in the diced corned beef, spreading it evenly. Cook for another 5-7 minutes, pressing down occasionally for crispy edges.
  • Season & serve: Add smoked paprika, salt, and pepper. If using eggs, create small wells in the hash and crack eggs into them. Cook until eggs reach desired doneness.
  • Garnish with parsley and serve hot.

Notes

  • For extra crispiness, let the hash sit undisturbed for a few minutes before stirring.
  • Leftover corned beef works best, as it has more flavor.
  • Swap potatoes with sweet potatoes for a healthier variation.
  • Add Worcestershire sauce for an umami boost.
  • Serve with toast or a side salad for a complete meal.
