- 1 lb (450g) fresh asparagus, trimmed and cut into 1-inch pieces
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 3 cups vegetable broth (or chicken broth)
- 1 cup heavy cream (or half-and-half)
- 1 tbsp olive oil or butter
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp lemon juice (optional)
- 1/4 tsp ground nutmeg
- Optional: 1 small potato (for extra creaminess), 1/2 cup shredded Parmesan cheese
Instructions
- Prepare the Asparagus: Trim and cut into small pieces.
- Sauté Aromatics: Heat oil/butter in a pot, cook onions for 2-3 minutes, then add garlic for 30 seconds.
- Cook the Asparagus: Add asparagus and broth, bring to a boil, then simmer for 10-12 minutes.
- Blend the Soup: Use an immersion blender or regular blender to puree until smooth.
- Add Cream & Seasonings: Stir in cream, salt, pepper, nutmeg, and lemon juice. Simmer for 5 minutes.
- Serve: Garnish with Parmesan, fresh herbs, or a drizzle of olive oil.
