Ingredients

Scale

For the Shrimp:

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder

For the Creamy Chipotle Sauce:

  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 2 chipotle peppers in adobo sauce, finely chopped
  • 1 tablespoon adobo sauce (from the chipotle can)
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup grated Parmesan cheese (optional)
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  • Prepare the Shrimp: In a bowl, season shrimp with salt, black pepper, smoked paprika, and garlic powder.
  • Cook the Shrimp: Heat olive oil and butter in a skillet over medium-high heat. Cook shrimp for 2-3 minutes per side until pink and opaque. Remove from skillet and set aside.
  • Make the Sauce: In the same skillet, melt butter and sauté garlic for 30 seconds. Add chopped chipotle peppers and adobo sauce, stirring to release flavors.
  • Add Liquids & Seasoning: Pour in heavy cream and chicken broth, stirring well. Add cumin, paprika, salt, and black pepper. Simmer for 3-5 minutes until thickened.
  • Enhance Creaminess: Stir in grated Parmesan (if using) and mix until melted.
  • Combine & Finish: Return shrimp to the skillet, coat in sauce, and cook for 2 more minutes. Squeeze lime juice and garnish with fresh cilantro.
  • Serve Immediately: Enjoy over rice, pasta, tacos, or vegetables

Notes

  • Control Spice Level: Start with one chipotle pepper and add more for extra heat.
  • Dairy-Free Option: Use coconut milk instead of heavy cream.
  • Enhance Flavor: Use hot chicken broth for a deeper taste.
  • Don’t Overcook Shrimp: They cook quickly—remove once pink and opaque.
  • Store & Reheat Properly: Keep leftovers in an airtight container for up to 3 days. Reheat over low heat to prevent sauce from separating.
