Ingredients
- 1 cup orzo pasta
- 2 cups fresh broccoli florets (chopped small)
- 1 ½ cups vegetable or chicken broth
- 1 cup whole milk or half-and-half
- 1 cup shredded sharp cheddar cheese
- 2 tablespoons unsalted butter
- 2 cloves garlic (minced)
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon smoked paprika (optional)
- ¼ teaspoon red pepper flakes (optional)
- ½ teaspoon Dijon mustard (enhances the cheesy flavor)
- ¼ cup Parmesan cheese (for extra richness)
- Fresh parsley or chives (for garnish)
Instructions
1️⃣ Sauté Garlic and Butter
- Heat butter in a large skillet over medium heat.
- Add minced garlic and sauté for 1 minute until fragrant.
2️⃣ Toast the Orzo
- Stir in orzo pasta and cook for 2 minutes, stirring frequently.
- This step adds a nutty flavor and prevents sticking.
3️⃣ Add Broth and Simmer
- Pour in vegetable or chicken broth, stir well.
- Cover and simmer for 8-10 minutes, until the orzo is almost tender.
4️⃣ Stir in Broccoli
- Add chopped broccoli and cook for another 5 minutes until tender.
5️⃣ Make It Creamy
- Reduce heat to low and stir in milk or half-and-half.
- Simmer for 3 minutes, stirring continuously.
6️⃣ Add Cheese and Seasonings
- Stir in cheddar cheese, Parmesan, Dijon mustard, salt, pepper, and smoked paprika.
- Mix well until the cheese is fully melted and the sauce is creamy.
7️⃣ Garnish and Serve
- Remove from heat and sprinkle with fresh parsley or chives.
