This Creamy One-Pot Broccoli Cheddar Orzo is an easy, cheesy, and comforting meal, ready in 30 minutes with minimal cleanup!

Ingredients

Scale
  • 1 cup orzo pasta
  • 2 cups fresh broccoli florets (chopped small)
  • 1 ½ cups vegetable or chicken broth
  • 1 cup whole milk or half-and-half
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons unsalted butter
  • 2 cloves garlic (minced)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon smoked paprika (optional)
  • ¼ teaspoon red pepper flakes (optional)
  • ½ teaspoon Dijon mustard (enhances the cheesy flavor)
  • ¼ cup Parmesan cheese (for extra richness)
  • Fresh parsley or chives (for garnish)

Instructions

1️⃣ Sauté Garlic and Butter

  • Heat butter in a large skillet over medium heat.
  • Add minced garlic and sauté for 1 minute until fragrant.

2️⃣ Toast the Orzo

  • Stir in orzo pasta and cook for 2 minutes, stirring frequently.
  • This step adds a nutty flavor and prevents sticking.

3️⃣ Add Broth and Simmer

  • Pour in vegetable or chicken broth, stir well.
  • Cover and simmer for 8-10 minutes, until the orzo is almost tender.

4️⃣ Stir in Broccoli

  • Add chopped broccoli and cook for another 5 minutes until tender.

5️⃣ Make It Creamy

  • Reduce heat to low and stir in milk or half-and-half.
  • Simmer for 3 minutes, stirring continuously.

6️⃣ Add Cheese and Seasonings

  • Stir in cheddar cheese, Parmesan, Dijon mustard, salt, pepper, and smoked paprika.
  • Mix well until the cheese is fully melted and the sauce is creamy.

7️⃣ Garnish and Serve

  • Remove from heat and sprinkle with fresh parsley or chives.
  • Serve warm and enjoy!

Notes

Use freshly grated cheese – It melts better than pre-shredded cheese.
Chop broccoli small – Ensures even cooking and a great texture.
Adjust liquid as needed – Orzo absorbs a lot of liquid, add extra broth or milk if needed.
Don’t overcook the orzo – It should be al dente for the best texture.
Stir frequently – Helps create a smooth, creamy consistency.
Add protein – Stir in cooked chicken, shrimp, or crispy bacon for a heartier meal.
