Ingredients

Scale

Main Ingredients:

  • 1 ½ cups orzo pasta
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 3 cups vegetable broth (or chicken broth)
  • 2 cups broccoli florets, chopped
  • 1 cup heavy cream (or whole milk for a lighter version)
  • 1 ½ cups cheddar cheese, shredded
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon paprika (optional, for extra flavor)
  • ¼ teaspoon red pepper flakes (optional, for a little heat)

For Garnish:

  • 2 tablespoons Parmesan cheese, grated
  • Fresh parsley or chives, chopped
  • A drizzle of olive oil (optional)

Instructions

  • Sauté the Garlic – In a large pot, melt butter over medium heat. Add the garlic and sauté for 30 seconds until fragrant.
  • Toast the Orzo – Stir in the orzo pasta and cook for 1-2 minutes until lightly toasted.
  • Cook the Orzo – Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 8-10 minutes, stirring occasionally.
  • Add the Broccoli – Stir in the broccoli florets, cover, and cook for another 3-4 minutes until tender.
  • Make it Creamy – Lower the heat, add the heavy cream, then stir in cheddar cheese until melted.
  • Season and Garnish – Add salt, pepper, paprika, and red pepper flakes, then top with Parmesan cheese and fresh parsley.
  • Serve and Enjoy! – Serve warm as a main dish or a side.

Notes

  • For a protein boost, add grilled chicken or shrimp.
  • Make it lighter by using whole milk instead of heavy cream.
  • For extra crispiness, top with toasted breadcrumbs before serving.
  • If the orzo thickens too much, stir in extra broth or milk before serving.
  • Store leftovers in an airtight container for up to 4 days in the fridge
