- 2 pounds red potatoes
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1/2 cup chopped green onions
- 1/2 cup chopped celery
- 1/4 cup chopped fresh parsley
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- Wash and cut the red potatoes into bite-sized pieces.
- Boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and let them cool.
- In a large bowl, mix together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
- Add the cooled potatoes, green onions, celery, and parsley to the bowl.
- Toss everything together until well combined.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- For a healthier version, you can substitute Greek yogurt for mayonnaise.
- Feel free to add other ingredients like hard-boiled eggs or bacon for extra flavor.
