- 2 cloves garlic, minced
- 1 medium carrot, diced
- 1 medium celery stalk, diced
- 4 cups beef broth
- 1 cup sauerkraut, drained and rinsed
- 1 cup cooked corned beef, chopped
- 1 teaspoon caraway seeds
- 1 teaspoon dried thyme
- 1 cup heavy cream
- 1 cup shredded Swiss cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Rye bread, for serving (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion, garlic, carrot, and celery. Sauté until vegetables are softened, about 5-7 minutes.
- Pour in the beef broth and bring to a simmer. Add sauerkraut, chopped corned beef, caraway seeds, and thyme. Cook for 10-15 minutes, allowing flavors to meld.
- Reduce heat to low and stir in the heavy cream and shredded Swiss cheese. Cook until the cheese is melted and the soup is creamy, about 5 minutes. Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley and accompanied by rye bread if desired.
Notes
- For a vegetarian version, substitute corned beef with mushrooms or a plant-based protein.
- Adjust the thickness of the soup by adding more or less beef broth.
