  • 1 teaspoon caraway seeds
  • 1 teaspoon dried thyme
  • 1 cup heavy cream
  • 1 cup shredded Swiss cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Rye bread, for serving (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion, garlic, carrot, and celery. Sauté until vegetables are softened, about 5-7 minutes.
  2. Pour in the beef broth and bring to a simmer. Add sauerkraut, chopped corned beef, caraway seeds, and thyme. Cook for 10-15 minutes, allowing flavors to meld.
  3. Reduce heat to low and stir in the heavy cream and shredded Swiss cheese. Cook until the cheese is melted and the soup is creamy, about 5 minutes. Season with salt and pepper to taste.
  4. Serve hot, garnished with fresh parsley and accompanied by rye bread if desired.
