For the Sushi Rice:

For the Shrimp:

- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- ½ tsp garlic powder
- ½ tsp paprika
- Salt and pepper to taste
- Vegetable oil (for frying)
For the Toppings:
- 1 avocado, sliced
- 1 cucumber, julienned
- 1 cup shredded carrots
- 2 sheets nori (seaweed), cut into strips
- 2 tbsp sesame seeds (optional)
- ¼ cup pickled ginger
- 2 green onions, chopped
For the Sauces:
- ½ cup mayonnaise
- 1 tbsp Sriracha (for spicy mayo)
- Soy sauce or tamari (for drizzling)
Instructions
- Prepare the Sushi Rice:
- Rinse the sushi rice under cold water until the water runs clear.
- Cook the rice with 2 ½ cups water in a rice cooker.
- Mix the cooked rice with rice vinegar, sugar, and salt. Let it cool.
- Cook the Shrimp:
- Pat the shrimp dry.
- Set up three bowls: one for flour, one for beaten eggs, and one for panko mixed with garlic powder, paprika, salt, and pepper.
- Coat shrimp in flour, then dip in eggs, and finally coat with panko breadcrumbs.
- Heat oil in a frying pan and fry the shrimp until golden brown. Drain on paper towels.
- Assemble the Bowls:
- Divide the sushi rice into bowls.
- Add crispy shrimp, avocado slices, cucumber, carrots, nori strips, sesame seeds, pickled ginger, and green onions on top.
- Drizzle with spicy mayo and soy sauce.
