Ingredients

Scale

For the Sushi Rice:

  • 2 cups sushi rice
  • 2 ½ cups water
  • 3 tbsp rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt

For the Shrimp:

  • 1 lb large shrimp, peeled and deveined
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt and pepper to taste
  • Vegetable oil (for frying)

For the Toppings:

  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 1 cup shredded carrots
  • 2 sheets nori (seaweed), cut into strips
  • 2 tbsp sesame seeds (optional)
  • ¼ cup pickled ginger
  • 2 green onions, chopped

For the Sauces:

  • ½ cup mayonnaise
  • 1 tbsp Sriracha (for spicy mayo)
  • Soy sauce or tamari (for drizzling)

Instructions

  1. Prepare the Sushi Rice:
    • Rinse the sushi rice under cold water until the water runs clear.
    • Cook the rice with 2 ½ cups water in a rice cooker.
    • Mix the cooked rice with rice vinegar, sugar, and salt. Let it cool.
  2. Cook the Shrimp:
    • Pat the shrimp dry.
    • Set up three bowls: one for flour, one for beaten eggs, and one for panko mixed with garlic powder, paprika, salt, and pepper.
    • Coat shrimp in flour, then dip in eggs, and finally coat with panko breadcrumbs.
    • Heat oil in a frying pan and fry the shrimp until golden brown. Drain on paper towels.
  3. Assemble the Bowls:
    • Divide the sushi rice into bowls.
    • Add crispy shrimp, avocado slices, cucumber, carrots, nori strips, sesame seeds, pickled ginger, and green onions on top.
    • Drizzle with spicy mayo and soy sauce.

Notes

  • Crunch Perfection: Use panko breadcrumbs for extra crunch and ensure the oil is hot enough for frying (350°F/175°C).
  • Gluten-Free Option: Replace panko with gluten-free breadcrumbs and use tamari instead of soy sauce.
  • Air Frying: To make the shrimp healthier, air fry them at 400°F (200°C) for 10 minutes, flipping halfway.
  • Vegetarian Alternative: Substitute shrimp with tempura tofu or roasted vegetables for a plant-based version.
  • Meal Prep: Store all components separately in airtight containers and assemble the bowl right before serving.
