- 2 lbs small potatoes (baby or new potatoes)
- 3 tablespoons olive oil

Instructions

Boil Potatoes:
Place potatoes in a large pot and cover with cold water. Add salt, bring to a boil, and cook until potatoes are fork-tender, about 15-20 mins. -
Preheat Oven and Smash Potatoes:
Preheat oven to 425°F (220°C). Drain potatoes and transfer them to a baking sheet lined with parchment paper. Gently smash each potato using a fork or potato masher. -
Season and Roast:
Drizzle potatoes with olive oil and sprinkle evenly with garlic powder, salt, and pepper. Roast for 25-30 mins, flipping halfway, until golden brown and crispy. -
Garnish and Serve:
Remove from oven, garnish with fresh herbs and Parmesan cheese if desired. Serve immediately.
