- 6 bell peppers (red, green, yellow, or orange)
- 1 lb ground beef, turkey, or sausage
- 1 cup cooked rice (white, brown, or cauliflower rice for low-carb)
- 1 can (14.5 oz) diced tomatoes, drained
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup tomato sauce or marinara sauce
- 1/2 cup shredded cheese (cheddar, mozzarella, or Parmesan)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tsp Italian seasoning
- 1/2 cup broth (chicken, beef, or vegetable)
- Fresh parsley for garnish (optional)
Instructions
- Prepare the Peppers: Wash the bell peppers, slice off the tops, and remove the seeds and membranes.
- Make the Filling: In a bowl, mix ground meat, cooked rice, diced tomatoes, onions, garlic, seasonings, and half of the cheese.
- Stuff the Peppers: Fill each pepper with the prepared mixture and place them upright in the crockpot.
- Add Sauce & Broth: Pour tomato sauce over the peppers and add broth to the bottom of the slow cooker.
- Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours until the peppers are tender.
- Add Cheese: In the last 30 minutes, sprinkle remaining cheese over the peppers and allow it to melt.
- Serve & Garnish: Carefully remove peppers, spoon some sauce over them, and garnish with fresh parsley.

- Use lean ground meat to prevent excess grease in the crockpot.
