  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce or marinara sauce
  • 1/2 cup shredded cheese (cheddar, mozzarella, or Parmesan)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1/2 cup broth (chicken, beef, or vegetable)
  • Fresh parsley for garnish (optional)

Instructions

  • Prepare the Peppers: Wash the bell peppers, slice off the tops, and remove the seeds and membranes.
  • Make the Filling: In a bowl, mix ground meat, cooked rice, diced tomatoes, onions, garlic, seasonings, and half of the cheese.
  • Stuff the Peppers: Fill each pepper with the prepared mixture and place them upright in the crockpot.
  • Add Sauce & Broth: Pour tomato sauce over the peppers and add broth to the bottom of the slow cooker.
  • Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours until the peppers are tender.
  • Add Cheese: In the last 30 minutes, sprinkle remaining cheese over the peppers and allow it to melt.
  • Serve & Garnish: Carefully remove peppers, spoon some sauce over them, and garnish with fresh parsley.
