  • 2 eggs, beaten

  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 small onion, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • ½ teaspoon white pepper
  • 1 teaspoon chili flakes (optional)
  • Salt, to taste
  • 2 tablespoons vegetable oil

Instructions

Step 1: Prepare the Ingredients

  • If using leftover duck, shred or dice it.
  • Dice the vegetables and chop the green onions.
  • Ensure the rice is cold and separate any clumps.
  • Beat the eggs and set aside.

Step 2: Cook the Eggs

  • Heat 1 tablespoon of oil in a large wok over medium heat.
  • Pour in the beaten eggs and scramble them gently until fully cooked.
  • Remove and set aside.

Step 3: Sauté Aromatics & Duck

  • In the same wok, add 1 tablespoon of oil.
  • Sauté the garlic, ginger, and onion until fragrant.
  • Add the shredded duck and stir-fry for 2-3 minutes until slightly crispy.

Step 4: Stir-Fry the Rice

  • Add the cold rice, breaking up clumps.
  • Pour in the soy sauce, oyster sauce, and hoisin sauce, stirring to combine.

Step 5: Add Vegetables & Finish the Dish

  • Toss in the vegetables and stir-fry for 2-3 minutes.
  • Return the scrambled eggs to the wok.
  • Season with white pepper, sesame oil, and chili flakes.
  • Adjust seasoning if needed and mix well.
