- 2 cups cooked jasmine rice (preferably day-old)
- 1 ½ cups cooked duck meat, shredded or diced
- 2 eggs, beaten
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 3 green onions, chopped
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 1 small onion, diced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sesame oil
- ½ teaspoon white pepper
- 1 teaspoon chili flakes (optional)
- Salt, to taste
- 2 tablespoons vegetable oil
Instructions
Step 1: Prepare the Ingredients
- If using leftover duck, shred or dice it.
- Dice the vegetables and chop the green onions.
- Ensure the rice is cold and separate any clumps.
- Beat the eggs and set aside.
Step 2: Cook the Eggs
- Heat 1 tablespoon of oil in a large wok over medium heat.
- Pour in the beaten eggs and scramble them gently until fully cooked.
- Remove and set aside.
Step 3: Sauté Aromatics & Duck
- In the same wok, add 1 tablespoon of oil.
- Sauté the garlic, ginger, and onion until fragrant.
- Add the shredded duck and stir-fry for 2-3 minutes until slightly crispy.
Step 4: Stir-Fry the Rice
- Add the cold rice, breaking up clumps.
- Pour in the soy sauce, oyster sauce, and hoisin sauce, stirring to combine.
Step 5: Add Vegetables & Finish the Dish
- Toss in the vegetables and stir-fry for 2-3 minutes.
- Return the scrambled eggs to the wok.
- Season with white pepper, sesame oil, and chili flakes.
- Adjust seasoning if needed and mix well.
Notes
- Use Day-Old Rice – Fresh rice is too sticky; refrigerated rice gives the best texture.
- Cook on High Heat – Ensures proper caramelization and prevents mushy rice.
- Don’t Overcrowd the Pan – Stir-fry in batches for even cooking.
- Enhance Flavor – Add a splash of dark soy sauce for deeper color.
