Description

Discover easy Dump-and-Bake Chicken Tzatziki with Rice—juicy chicken, fluffy rice, and creamy tzatziki in one flavorful, healthy meal!

Ingredients

Scale

For the Chicken and Rice:

  • 4 boneless, skinless chicken breasts, cubed
  • 1½ cups uncooked long-grain white rice
  • 2½ cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Tzatziki Sauce:

  • 1 cup plain Greek yogurt
  • 1 cup diced cucumber
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh dill
  • ¼ cup crumbled feta cheese (optional, for topping)

Instructions

  • Preheat Oven:

    • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  • Prepare Chicken and Rice:

    • Spread the uncooked rice evenly in the baking dish.
    • Place cubed chicken breasts over the rice. Sprinkle evenly with oregano, garlic powder, salt, and pepper.
    • Pour chicken broth evenly over chicken and rice.
  • Bake:

    • Cover the dish tightly with foil. Bake for 40-45 minutes, until chicken is fully cooked and rice is tender.
  • Make Tzatziki Sauce:

    • In a bowl, combine Greek yogurt, diced cucumber, minced garlic, lemon juice, and fresh dill. Chill in the refrigerator while the chicken bakes.
  • Serve:

    • Remove dish from oven, uncover, and fluff rice lightly.
    • Top chicken and rice with chilled tzatziki sauce, sprinkle with feta cheese, and serve immediately.

Notes

  • Use long-grain rice to ensure proper cooking without mushiness.
  • Evenly distribute the broth to avoid uneven cooking or crunchy rice.
  • Chill tzatziki sauce beforehand for enhanced flavors.
  • Customize your veggies: Add tomatoes, bell peppers, or spinach for extra nutrition.
  • Store leftovers separately from the sauce in the refrigerator and add fresh tzatziki when reheating.
