Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large mixing bowl, combine the chopped rhubarb and sugar, and let it sit for about 10 minutes.
- Add the softened butter, eggs, and vanilla extract to the bowl and mix until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool before serving.
