Description

French Onion Stuffed Potatoes are a delicious and creamy dish that combines the flavors of caramelized onions and melted cheese, all stuffed into tender baked potatoes.

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef or vegetable broth
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1 cup shredded Gruyère cheese (or Swiss cheese)
  • 1/2 cup sour cream
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Scrub the potatoes and prick them several times with a fork. Bake directly on the oven rack for 45-60 minutes, or until tender.
  2. While the potatoes are baking, heat olive oil in a large skillet over medium heat. Add the sliced onions, sugar, and salt. Cook, stirring occasionally, for about 20-25 minutes, until the onions are caramelized and golden brown.
  3. Add black pepper, broth, and thyme to the skillet. Cook for an additional 5-10 minutes, allowing the liquid to reduce slightly.
  4. Once the potatoes are done, remove them from the oven and let them cool slightly. Cut a slit down the center of each potato and gently scoop out some of the flesh, leaving a small border.
  5. In a bowl, combine the scooped potato flesh, caramelized onion mixture, and half of the Gruyère cheese. Mix until well combined.
  6. Stuff the potato skins with the onion and potato mixture. Top with the remaining Gruyère cheese.
  7. Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let cool for a few minutes. Drizzle with sour cream and garnish with chopped parsley if desired.

  • For a vegetarian option, use vegetable broth instead of beef broth.
