French Onion Stuffed Potatoes are a delicious and creamy dish that combines the flavors of caramelized onions and melted cheese, all stuffed into tender baked potatoes.

- 4 large russet potatoes
- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup beef or vegetable broth
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- 1 cup shredded Gruyère cheese (or Swiss cheese)
- 1/2 cup sour cream
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Scrub the potatoes and prick them several times with a fork. Bake directly on the oven rack for 45-60 minutes, or until tender.
- While the potatoes are baking, heat olive oil in a large skillet over medium heat. Add the sliced onions, sugar, and salt. Cook, stirring occasionally, for about 20-25 minutes, until the onions are caramelized and golden brown.
- Add black pepper, broth, and thyme to the skillet. Cook for an additional 5-10 minutes, allowing the liquid to reduce slightly.
- Once the potatoes are done, remove them from the oven and let them cool slightly. Cut a slit down the center of each potato and gently scoop out some of the flesh, leaving a small border.
- In a bowl, combine the scooped potato flesh, caramelized onion mixture, and half of the Gruyère cheese. Mix until well combined.
- Stuff the potato skins with the onion and potato mixture. Top with the remaining Gruyère cheese.
- Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes. Drizzle with sour cream and garnish with chopped parsley if desired.
Notes
- For a vegetarian option, use vegetable broth instead of beef broth.
- Feel free to add other toppings like crispy bacon or additional herbs.
- These stuffed potatoes can be made ahead of time and reheated before serving.
