Description
French Toast Muffins are a delightful breakfast treat that combines the classic flavors of French toast in a convenient muffin form.
Ingredients
Scale
- 1 loaf of day-old bread (about 10–12 slices), cut into cubes
- 4 large eggs
- 1 cup milk
- 1/2 cup heavy cream
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup maple syrup (for drizzling)
- Powdered sugar (for dusting, optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a muffin tin or line with muffin liners.
- In a large bowl, whisk together eggs, milk, heavy cream, granulated sugar, vanilla extract, cinnamon, and salt until well combined.
- Add the bread cubes to the egg mixture, gently folding to coat all the pieces. Let it sit for about 10 minutes to absorb the liquid.
- Divide the bread mixture evenly among the muffin cups, filling each about 3/4 full.
- Bake for 25-30 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack.
- Drizzle with maple syrup and dust with powdered sugar if desired before serving.
Notes
- For best results, use day-old bread to help absorb the egg mixture.
- Feel free to add mix-ins like chocolate chips or nuts for extra flavor.
- These muffins can be stored in an airtight container for up to 3 days.
