- 1 bunch asparagus, trimmed
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp lemon zest
Instructions
Step 1: Prepare the Chicken
- Pat dry the chicken bites with a paper towel.
- In a bowl, toss the chicken with olive oil, salt, black pepper, paprika, garlic powder, and onion powder.
Step 2: Cook the Chicken
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken bites and cook for 4-5 minutes, stirring occasionally, until golden brown and fully cooked.
- Remove the chicken from the skillet and set aside.
Step 3: Make the Garlic Butter Sauce
- In the same skillet, melt butter over medium heat.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Stir in red pepper flakes (if using), lemon juice, and chopped parsley.
- Return the cooked chicken bites to the skillet and toss to coat in the sauce.
Step 4: Cook the Asparagus
- In a separate skillet, heat olive oil over medium heat.
- Add the asparagus and season with salt and black pepper.
- Sauté for 3-4 minutes, stirring occasionally, until tender-crisp.
- Sprinkle with lemon zest before serving.
Step 5: Serve
- Plate the chicken bites and asparagus together.
- Garnish with extra parsley or lemon slices, if desired.
