Ingredients
Scale
- 2 large boneless, skinless chicken breasts (or thighs), cut into bite-sized cubes
- 4 tablespoons unsalted butter
- 5 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1/2 teaspoon Italian seasoning
- Salt & black pepper, to taste
- 2 tablespoons olive oil
- 1 tablespoon fresh parsley, chopped
- Juice of 1/2 lemon
Instructions
- Prepare the Chicken: Cut the chicken into bite-sized cubes and pat dry with a paper towel. Season with salt, black pepper, smoked paprika, onion powder, and Italian seasoning.
- Sear the Chicken: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add chicken and cook for 3-4 minutes per side until golden brown. Remove from the pan.
- Make the Garlic Butter Sauce: Reduce heat to medium, melt butter, and add minced garlic and red pepper flakes. Sauté for 30 seconds.
- Coat the Chicken: Return the cooked chicken to the pan and toss in the garlic butter sauce.
- Finish & Serve: Squeeze fresh lemon juice over the chicken, garnish with parsley, and serve warm.
Notes
- For extra crispiness, lightly coat the chicken in cornstarch before cooking.
- Use fresh garlic instead of garlic powder for a richer taste.
- Don’t overcrowd the pan, as it prevents proper browning.
- Add a creamy twist by stirring in a splash of heavy cream or Parmesan cheese.
- Reheat gently over low heat with a splash of broth or butter to keep the chicken juicy.
