For the Parmesan Mushroom Sauce:

  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 8 oz mushrooms, sliced (button, cremini, or baby bella)
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chicken broth (or white wine for added depth)
  • 1 cup heavy cream (or half & half for a lighter option)
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  • Prepare the Chicken:

    • Pat chicken dry and season both sides with salt, pepper, garlic powder, and smoked paprika.
    • Lightly coat with flour, shaking off excess.
  • Sear the Chicken:

    • Heat olive oil and butter in a skillet over medium-high heat.
    • Cook chicken for 4-5 minutes per side until golden brown and cooked through (165°F/75°C).
    • Remove from skillet and set aside.
  • Make the Parmesan Mushroom Sauce:

    • Add butter and olive oil to the same skillet.
    • Sauté mushrooms for 3-4 minutes until softened.
    • Stir in garlic, Italian seasoning, salt, and black pepper. Cook for another minute.
    • Pour in chicken broth (or wine) and scrape the pan to deglaze.
    • Lower heat and stir in heavy cream. Simmer for 2-3 minutes.
    • Stir in Parmesan cheese until melted and smooth.
  • Combine & Serve:

    • Return chicken to the skillet, spooning sauce over it.
    • Simmer for 2 minutes to meld flavors.
    • Garnish with fresh parsley and serve hot.
