For the Parmesan Mushroom Sauce:
- 1 tablespoon unsalted butter
- 1 tablespoon olive oil
- 8 oz mushrooms, sliced (button, cremini, or baby bella)
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup chicken broth (or white wine for added depth)
- 1 cup heavy cream (or half & half for a lighter option)
- 1/2 cup grated Parmesan cheese
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions

Prepare the Chicken:
- Pat chicken dry and season both sides with salt, pepper, garlic powder, and smoked paprika.
- Lightly coat with flour, shaking off excess.

Sear the Chicken:
- Heat olive oil and butter in a skillet over medium-high heat.
- Cook chicken for 4-5 minutes per side until golden brown and cooked through (165°F/75°C).
- Remove from skillet and set aside.

Make the Parmesan Mushroom Sauce:
- Add butter and olive oil to the same skillet.
- Sauté mushrooms for 3-4 minutes until softened.
- Stir in garlic, Italian seasoning, salt, and black pepper. Cook for another minute.
- Pour in chicken broth (or wine) and scrape the pan to deglaze.
- Lower heat and stir in heavy cream. Simmer for 2-3 minutes.
- Stir in Parmesan cheese until melted and smooth.

- Return chicken to the skillet, spooning sauce over it.
