Ingredients

  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook quinoa according to package instructions and set aside.
  2. Grill the chicken breast until fully cooked, then slice it.
  3. In a large bowl, combine the cooked quinoa, grilled chicken, cherry tomatoes, cucumber, red onion, and Kalamata olives.
  4. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
