- Tzatziki sauce
- Diced tomatoes
- Sliced cucumbers

Instructions
-
Prepare the Marinade:
- In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, black pepper, cumin, and red pepper flakes.
- Add the chicken pieces to the marinade, tossing to coat evenly.
- Cover and refrigerate for at least 30 minutes (or up to 24 hours for deeper flavor).
-
Skewer the Chicken:
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Thread the marinated chicken onto skewers, leaving a little space between pieces to ensure even cooking.
-
Grill the Souvlaki:
- Preheat your grill or grill pan to medium-high heat.
- Brush the grates with a bit of olive oil to prevent sticking.
- Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is golden brown and fully cooked (internal temp: 165°F/75°C).
-
Assemble and Serve:
- Warm the pita bread on the grill or stovetop for a few seconds.
- Spread a generous amount of tzatziki sauce onto the pita.
- Add grilled chicken, tomatoes, cucumbers, onions, and feta cheese.
- Garnish with fresh parsley or dill, and serve immediately!
Notes
- Use Chicken Thighs for Juiciness – They retain more moisture than breasts.
- Marinate Overnight – For the most flavorful souvlaki.
- Grill on High Heat – This creates a delicious charred exterior.
- Serve with Fresh Lemon Wedges – A squeeze of lemon enhances the flavor.
- Make it Keto-Friendly – Skip the pita and serve over a Greek salad.
