For the Brownies:
- 1/2 cup plain Greek yogurt (full-fat or low-fat)
- 1/4 cup unsweetened applesauce (or mashed banana)
- 1/2 cup coconut sugar or brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup oat flour or whole wheat flour (or all-purpose flour)
- 1/3 cup dark chocolate chips
Instructions
- Preheat & Prepare: Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
- Mix Wet Ingredients: In a large bowl, whisk together Greek yogurt, applesauce, coconut sugar, eggs, and vanilla extract until smooth.
- Add Dry Ingredients: Sift in cocoa powder, salt, and baking soda, stirring until well combined. Fold in oat flour until the batter is smooth.
- Add Chocolate Chips: Gently fold in dark chocolate chips for extra indulgence.
- Pour & Bake: Pour the batter into the prepared pan, spreading it evenly. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Cool & Serve: Let the brownies cool completely before slicing. Enjoy them warm or chilled!

- For extra fudgy brownies, slightly underbake them and let them cool in the pan.
