A refreshing summer salad featuring grilled peaches and blueberries, perfect for warm weather.
Ingredients

- 2 ripe peaches, halved and pitted
- 1 cup fresh blueberries
- 4 cups mixed greens
- 1/4 cup feta cheese, crumbled
- 1/4 cup walnuts, chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat the grill to medium heat.
- Brush the peach halves with olive oil.
- Grill the peaches for about 3-4 minutes on each side until grill marks appear.
- In a large bowl, combine the mixed greens, blueberries, feta cheese, and walnuts.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Once the peaches are grilled, slice them and add to the salad.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately and enjoy!

- For added flavor, marinate the peaches in honey before grilling.
